MILLION DOLLAR SPAGHETTI


Million Dollar Spaghetti brings the best of spaghetti to the best of lasagna and marries them together. Don’t shy away from this crowd-pleasing casserole!

Servings: 12 Servings

INGREDIENTS
  • 16 Ounces Dried Spaghetti Noodles
  • 1 Cup 1 Medium Yellow Onion, Chopped
  • 4 Cloves Garlic Minced
  • 1 1/2 Pounds Sweet Italian Sausage Casing Removed
  • 2–24 Ounce Jars Spaghetti Sauce-Divided
  • 8 Ounces Cottage Cheese or Ricotta Cheese
  • 8 Ounces Cream Cheese
  • 1/4 Cup Sour Cream
  • 3 Teaspoons Dried Italian Seasoning
  • 3 Cups Mozzarella Shredded-Divided
  • Salt
  • Pepper
  • 1/2 Cup Butter Cut Into Slices-Divided
INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Bring a large pot of water, with 1 Tablespoon of salt, to a boil. Cook pasta according to the package. Drain well, then return pasta to original pot, and add 3 cups or 1 jar of prepared marinara sauce and combine. Set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat until it shimmers. Add onion and garlic and cook until they begin to soften about 5 minutes. Add sausage to skillet, and brown, crumbling sausage with a wooden spoon.  Cook until there is no longer any pink in sausage. Drain well. Add the remaining 3 cups or 1 jar marinara sauce to skillet. Set aside.
  4. In a medium mixing bowl, combine Cottage cheese or ricotta cheese, cream cheese, sour cream, 1 cup mozzarella, and Italian seasoning. Set aside.
  5. Place half the sliced of butter in the baking dish. Spread half the spaghetti in the dish, then spread cheese mixture evenly over spaghetti. Top with the remaining butter slices. Spread remaining spaghetti over cheese mixture. Pour tomato meat sauce evenly over top layer of spaghetti.
  6. Top with remaining mozzarella and bake in preheated oven until casserole is heated through, about 35-45 minutes.

Scallop Spaghetti in White Wine Sauce

Scallop Spaghetti in White Wine Butter Garlic Sauce with Capers is a gourmet meal that you can easily make at home. Scallops in white wine butter sauce are moist and full of flavor!  Pasta with creamy garlic sauce works great with scallops!

Servings: 4 people

Ingredients
White Wine Sauce
  • 1  tablespoon  butter
  • 1  tablespoon  olive oil
  • 4  cloves garlic minced
  • 1 cup white wine
  • 1  cup  heavy cream
  • 1/4 cup Parmesan cheese shredded
  • 2  tablespoons  capers  drained
  • 1  teaspoon  lemon juice  freshly squeezed
  • salt to taste

Pasta
  • 8 oz spaghetti

Seared Scallops
  • 1  pound  scallops  medium size, about 12-14 scallops, thawed completely if frozen
  • 1/4  teaspoon  salt
  • 2  tablespoons  olive oil

Instructions
How to make white wine sauce
  1. In a medium skillet, heat butter, olive oil and minced garlic on medium heat.
  2. Cook for about a minute, until garlic softens.
  3. Add wine.  Bring to boil.  Boil for several minutes until the amount of wine reduces approximately to half.
  4. Add heavy cream and Parmesan cheese.  Bring to boil, and immediately reduce to simmer.   Simmer for a couple of minutes, stirring at all times, until the sauce thickens a bit.
  5. Remove from heat.  Stir in drained capers and freshly squeezed lemon juice.  Season with salt and pepper.  Taste, add more lemon juice, salt and and pepper if needed. Keep covered.

Pasta
  1. Cook spaghetti according to package instructions until al dente. Drain.  Add to the sauce, stir to combine.

How to sear scallops
  1. If using frozen scallops, make sure the scallops are thawed completely.
  2. Blot each scallop with paper towels to remove extra water.
  3. Season scallops with salt
  4. Heat 2 tablespoons olive oil in a large skillet on high heat until hot but not smoking. Oil should not be smoking, just rolling easily around the skillet.
  5. Add scallops without overcrowding the pan.
  6. Sear on one side for about 4 minutes until the scallops are a golden color. Don’t move the scallops around the pan in the beginning.
  7. Turn the scallops to the other side and cook for 2 or 3 more minutes.
  8. Remove from heat and transfer the scallops to the plate immediately.
  9. Don’t allow the scallops rest in the hot skillet, off heat.  That will make them steam and lose their crust.
  10. Add cooked scallops to the spaghetti with the creamy white wine sauce and reheat gently. Serve.

This Creamy Garlic Herb Mushroom Spaghetti is total comfort food! Simple ingredients, ready in about 30 minutes. Vegetarian.

INGREDIENTS
  • 8 ounces whole wheat pasta (spaghetti, linguine, etc.) – I like DeLallo brand
  • 4 tablespoons butter, divided
  • 3 cloves garlic, minced, divided
  • 16 ounces fresh mushrooms, sliced
  • 2 tablespoons flour (or whole wheat flour)
  • 1 teaspoon herbes de provence
  • 1 1/2 cups milk
  • salt and pepper to taste
  • 3 tablespoons olive oil
  • additional 1/4 cup water, broth, milk or cream (optional)
  • 1/4 cup fresh parsley (more to taste)

INSTRUCTIONS
  1. Pasta: Cook the pasta according to package directions. Set aside and toss with a little oil to prevent sticking.
  2. Mushrooms: Melt 2 tablespoons of butter over medium high heat. Add one clove of the garlic and saute for a minute until fragrant. Add the mushrooms and sauté for 5-10 minutes, until golden brown and softened. Set aside.

ONE POT TACO ZUCCHINI NOODLES

This is a healthier, low carb and gluten free version of one pot taco spaghetti, using ground turkey and zucchini noodles. It’s an easy meal and everything cooks in one pan.

INGREDIENTS:
  • 1 tbsp olive oil
  • 2 large zucchinis, spiralized
  • 1 lb lean ground turkey
  • 1 clove garlic, minced
  • 1/2 small brown onion, peeled and finely chopped
  • 3 tbsp of homemade taco seasoning (or one packet of your favorite taco seasoning)
  • 1/4 cup water
  • 14 oz can diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • fresh cilantro leaves
  • one lime, sliced into wedges

HOMEMADE TACO SEASONING
  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp table salt
  • 1 tsp ground black pepper

DIRECTIONS:
  1. In a large pan or skillet, add olive oil and bring to medium high heat. Add zucchini noodles and cook until zucchini release water and are just cooked. Drain water and remove noodles from pan, setting them aside for later.
  2. Add garlic, onions and ground turkey to your skillet. Cook until ground turkey has browned, crumbling the ground turkey as you cook it. Drain out excess fat.
  3. Sprinkle taco seasoning across turkey. Add entire contents of the diced tomatoes (including the liquid), 1/4 cup water and stir into the turkey mixture. Stir and cook on medium heat until everything is evenly mixed, turkey is cooked through, and sauce has thickened.
  4. Turn heat down to low and add in zucchini noodles. Gently toss zucchini into the sauce, but be careful not to cook the zucchini further or else the noodles will release more water and make the sauce watery. Sprinkle cheese over the pasta. Turn off heat and cover with a lid until cheese is melted.
  5. Garnish with cilantro and squeeze lime juice if desired before serving.
