Oven Baked Meatball Sandwiches

This oven baked meatball sandwich recipe is a perfect easy dinner idea for busy days. Also great for large groups, game day, or as an on-the-go meal. 
The ingredients are simple — you will need meatballs, pasta sauce, mozzarella cheese, and sandwich rolls.

Ingredients
  • Sandwich rolls (cut with one side intact)
  • Cooked Meatballs (your favorite recipe or frozen, pre-made meatballs)
  • Pasta Sauce (homemade or jarred)
  • Shredded Mozzarella Cheese
Instructions

  1. Spray a baking sheet with cooking spray. Preheat oven to 400 degrees F.
  2. Place your frozen cooked meatballs or homemade cooked meatballs in a large pot. Cover with your pasta sauce. Gently fold the meatballs with the sauce, Heat the meatballs and sauce on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
  3. Fill a roll with as many meatballs as you can fit (usually 4-5 meatballs, depends on size of meatballs and the size of the roll). Top with more pasta sauce from your pot. Place filled sandwich rolls closely on baking sheet. Top each sandwich with shredded mozzarella cheese.
  4. Bake until cheese is melted, hot, and bubbly.

Ingredients
  • 1 pound ground beef
  • 1/4 cup panko bread crumbs
  • 1 tablespoon parsley chopped
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • ¼ cup onion finely chopped
  • ½ teaspoon Garlic Powder
  • ⅛ teaspoon Pepper
  • ½ teaspoon salt
  • 1 egg
  • 1 tbsp. olive oil
  • 5 tbsp. butter
  • 3 tbsp. flour
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 Tablespoon Worcestershire sauce
  • 1 tsp. Dijon mustard
  • salt and pepper to taste

Instructions
  1. In a medium sized bowl combine ground beef, panko, parsley, allspice, nutmeg, onion, garlic powder, pepper, salt and egg. Mix until combined.
  2. Roll into 12 large meatballs or 20 small meatballs. In a [url:2]large skillet[/url] heat olive oil and 1 Tablespoon butter. Add the meatballs and cook turning continuously until brown on each side and cooked throughout. Transfer to a plate and cover with foil.
  3. Add 4 Tablespoons butter and flour to skillet and whisk until it turns brown. Slowly stir in beef broth and heavy cream. Add worchestershire sauce and dijon mustard and bring to a simmer until sauce starts to thicken. Salt and pepper to taste.
  4. Add the meatballs back to the skillet and simmer for another 1-2 minutes. Serve over egg noodles or rice.

Chicken Meatballs
  • 1 pound ground chicken
  • 1/4 red onion
  • 1/2 cup carrots

Butter Chicken Sauce
  • 1/2 cup ghee
  • 1 onion diced
  • 4 garlic cloves minced
  • 2 tsps chili powder
  • 1 1/2 tsp cumin
  • 1 tsp  dried cilantro

  • 1 tsp  ginger
  • 1/2 tsp  cinnamon
  • 1/4 tsp ground pepper
  • 1/4 tsp  cayenne powder
  • 1 tbsp lemon juice
  • 1 6oz tomato paste
  • 1 14oz canned coconut milk

Instructions
Chicken Meatballs
  1. Preheat oven to 400F
  2. Add everything but the ground chicken into a high powdered blender (or food processor) and do a fast chop.
  3. Add the blender contents into a bowl with the ground chicken.
  4. Roll into 1 inch balls and lay on a lined baking sheet.
  5. Bake for 10-15 minutes. The meatballs will not be fully cooked yet, that’s okay.

Paleo Butter Chicken Sauce
  1. In a heavy bottomed stock pot heat up half the ghee over medium heat.
  2. Add the onion, saute until translucent and then add the garlic and spices.
  3. Turn the heat down to low-medium and add the rest of the ingredients (including the rest of the ghee).
  4. Bring to a slow boil, whisking frequently.
  5. Add the chicken meatballs, cover and cook for 10-15 minutes (or until meatballs are fully cooked).
  6. Serve with cauliflower rice and enjoy!

SKILLET TURKEY MEATBALLS WITH LEMON RICE

This one-skillet wonder is quick and easy and terribly delicious. Tender skillet turkey meatballs cook together with lemon rice and the result is perfect.

YIELD: 6 SERVINGS

INGREDIENTS
MEATBALLS:
  •  1 1/2 pounds ground turkey
  •  2 tablespoons milk
  •  1/4 cup bread crumbs (panko, regular storebought or homemade)
  •  1 1/2 teaspoons fresh lemon zest
  •  1/2 teaspoon salt
  •  1/2 teaspoon pepper
  •  2 tablespoons chopped fresh parsley
  •  1 tablespoon olive oil

RICE:
  •  1 1/2 cups long grain or basmati white rice (see note)
  •  2 cloves garlic, finely minced or pressed through a garlic press
  •  3/4 teaspoon salt, plus more to taste if needed
  •  3 1/4 cups low-sodium chicken broth
  •  2 tablespoons freshly squeezed lemon juice
  •  1 1/2 teaspoons fresh lemon zest
  •  1/2 cup freshly grated Parmesan cheese

INSTRUCTIONS
  1. For the meatballs, in a large bowl, combine the ground turkey, milk, bread crumbs, lemon zest, salt, pepper, and parsley until well-combined. Roll into about 16 meatballs (about 1-2 inches in diameter).
  2. Heat the tablespoon olive oil in a large 12-inch nonstick skillet over medium heat until hot and rippling. Add the meatballs in a single layer and brown on each side. No need to cook through here as they will finish cooking with the rice – just get them nice and golden.
  3. Carefully scoop the meatballs out of the skillet onto a paper towel-lined plate and return the skillet to medium heat (wiping out any excess grease – leaving just a tiny bit for the rice).

Asian Turkey Meatballs

30 Minute Asian Turkey Meatballs. Baked and tossed in an Asian inspired sauce. Serve as an appetizer or add rice to make it a meal!

SERVINGS: 12 MEATBALLS

INGREDIENTS
  • 1 pound ground turkey
  • 3/4 cup panko breadcrumbs
  • 3 cloves garlic minced
  • 1 whole green onion both green and white parts, chopped
  • 1 large egg
  • 1/2 teaspoon sesame oil
  • 1 tablespoon low sodium soy sauce

Asian Sauce
  • 1/4 cup hoisin sauce
  • 1/8 cup low sodium soy sauce
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • green onions for serving if desired
  • sesame seeds for serving if desired

INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. Add turkey, breadcrumbs, garlic, green onions, egg, sesame oil and soy sauce. Mix with your hands until combined.
  3. Grease a baking sheet with oil.
  4. Portion out 12 meatballs. (Working with slightly wet hands helps)
  5. Place meatballs on the oiled baking sheet and cook for 15 minutes or until fully cooked, flipping halfway through.
  6. Take out of the oven and toss with the Asian sauce.
  7. Serve immediately and garnish with green onions and sesame seeds, if desired.
  8. Note: If you are freezing the meatballs do not toss with sauce until ready to serve.

Asian Sauce
  1. Add all of the ingredients to a medium bowl and stir to combine. Set aside until meatballs are done cooking.

FIRECRACKER CHICKEN MEATBALLS

This is my favorite way to eat chicken meatballs. They’re spiced up with a sweet, savory, and spicy firecracker sauce. They’re tender, filled with flavor, and require minimum work!

YIELD: 18-22 MEATBALLS

INGREDIENTS
MEATBALLS:
  • 1 ¾ – 2 pounds ground chicken (or turkey)
  • 4 teaspoons minced garlic
  • 1 ½ teaspoon salt
  • 1 teaspoon pepper
  • 2 large eggs
  • 1 cup Panko breadcrumbs*
  • ½ teaspoon paprika
  • 1 teaspoon onion powder

FIRECRACKER SAUCE:
  • ½ cup hot sauce (I recommend Franks)
  • 1 cup light brown sugar
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon salt
  • ¼-½ teaspoon red pepper flakes (depending on spice preference)

DIRECTIONS:
  1. Position 2 racks near the center of the oven and preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.
  2. In a saucepan, combine the ingredients of the firecracker sauce over medium high heat, allow to come to a boil, reduce the heat so it simmers. Let simmer for 8-10 minutes. Remove from heat and allow the sauce to cool. The sauce will thicken as it cools so don’t worry if it looks thin.
  3. In a large bowl, combine the ground chicken, garlic, salt pepper, eggs, panko, paprika, and onion powder. Use your hands to mix all the ingredients together. It’s easier to tell when he ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.
  4. Shape the meat mixture into ball, about 3 tablespoons of meat per ball. You can also do this with an ice cream scoop. Place shaped meatballs on prepared baking sheet. bake for 11-13 minutes or until the meatballs are completely cooked.
  5. Using 2 tablespoon, dip each individual meatball into the sauce. Alternately, you can brush each meatball with the sauce. Place back on the baking sheet and bake for an additional 1-2 minutes. Drizzle or brush with additional sauce as desired.

30 Minute Butter Chicken Meatballs

  • 1 pound ground turkey or chicken
  • 1 egg
  • 1/2 cup panko bread crumbs
  • kosher salt and pepper
  • 2 tablespoons extra virgin olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced or grated
  • 1 inch fresh ginger, grated
  • 1 tablespoon garam masala
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon cayenne pepper, more or less to taste
  • 1 can (6 ounces) tomato paste
  • 1 can (14 ounces) full fat coconut milk
  • 1/2 cup plain greek yogurt
  • 2 tablespoons butter
  • 1/4 cup fresh cilantro, roughly chopped
  • steamed rice and naan, for serving

INSTRUCTIONS
  1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
  2. Add the turkey, egg, bread crumbs, and a pinch each of salt and pepper to a bowl. Coat your hands with a bit of olive oil, and roll the meat into tablespoon size balls (will make 15-20 meatballs), placing them on the prepared baking sheet. Transfer to the oven and bake for 15 minutes or until the meatballs are crisp and cooked through.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and cook 5 minutes or until fragrant. Add the garlic and ginger, cooking another 5 minutes. Season with salt and pepper.
  4. Stir in the garam masala, curry powder, turmeric, and cayenne and cook until fragrant, about 1 minute.
  5. Add the tomato paste, coconut milk, and 1/2 cup water. Stir to combine, bring the sauce to a boil, cook 5 minutes or until the sauce thickens slightly. Stir in the yogurt and butter. Add the meatballs and cook, stirring occasionally, until the sauce thickens slightly, about 5 minutes. Remove from the heat and stir in the cilantro.
  6. Serve the meatballs and sauce over bowls of rice with fresh naan. Enjoy!

  • 500g / 1 lb beef mince (ground beef) (or lamb!)
  • 200g / 6.5oz pork mince (ground pork), or more beef
  • 2 garlic cloves, minced
  • 1 cup / 60g panko breadcrumbs (or use normal)
  • 1 egg
  • 1/4 cup fresh parsley, finely chopped
  • 6 large mint leaves, finely chopped (spearmint if you can, it’s authentic)
  • 1/2 tsp dried oregano
  • 1 tbsp extra virgin olive oil
  • 3/4 tsp salt
  • Black pepper

COOKING / SERVING:
  • 1/2 cup flour any white
  • 3 tbsp olive oil
  • Finely chopped parsley optional, for garnish
  • Tzatziki (Note 5) or Greek yoghurt

Instructions
  1. Grate the onion straight into a large bowl, then add remaining Meatball ingredients. Use your hands to mix well for a few minutes until the mixture is quite smooth and very well combined.
  2. Optional: Refrigerate for 1 hour – makes them easier to roll + retains round shape when cooking.
  3. Measure out heaped tablespoons and dollop onto a work surface – should make around 32 – 35. Then roll into balls.

  1. In small bowl combine panko bread crumbs and milk. Let sit for 10 minutes until bread crumbs have soaked up milk.
  2. In large skillet heat 1 tbsp. olive oil with 1 tbsp. butter, medium heat.
  3. Add onions and sauté until translucent, about 5 minutes, add garlic and oregano and sauté for another 1-2 minutes.
