Chocolate Chip Cookie Layered Pudding Dessert

Layers of chocolate chip cookies, cream cheese, chocolate pudding, and Cool Whip. Perfect almost no bake dessert for summer bbq’s and get togethers.

Ingredients
  • 1 tube (16.5 oz) refrigerated chocolate chip cookie dough
  • 1 bar (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 2 cartons (8 oz) Cool Whip, divided
  • 3 cups half and half milk
  • 1 small box chocolate instant pudding mix
  • 1 small box vanilla instant pudding mix
  • miniature chocolate chips for topping
Instructions
  1. Let the tube of cookie dough stand at room temperature for 5-10 minutes to soften so it’s easier to press into pan. 
  2. Heat oven to 350 degrees and lightly spray a 9×13 baking pan with cooking spray.

Boston Cream Pie Poke Cake

Boston Cream Pie Poke Cake – Major crowd-pleasing cake filled with vanilla pudding and sweetened condensed milk and topped with a homemade chocolate frosting!!

INGREDIENTS
  • 1 box yellow cake mix plus ingredients to make cake
  • 1 3.5 oz. instant vanilla pudding mix
  • 2 cups milk
  • 1 14 oz. can sweetened condensed milk
  • Frosting
  • 1½ sticks butter, softened
  • ¾ cup cocoa powder
  • ½ cup boiling water
  • 1 tsp vanilla
  • 5 cups powdered sugar

INSTRUCTIONS
  1. Bake cake according to box mix directions in a 13 x 9 pan.
  2. While cake is in the oven, mix pudding mix with 2 cups of milk. Whisk until combined and let sit for 2 minutes or until thickened. Whisk again for a few seconds.

  • 2 Cups Crushed Vanilla Wafers (~60 wafers)
  • ½ Cup (1 Stick) Butter, Melted
  • 4 Large Ripe Bananas, Divided
  • 1 Tablespoon Freshly Squeezed Lemon Juice
  • ¼ Cup Light Brown Sugar, Packed
  • 4 Teaspoons Vanilla Extract, Divided
  • 4 (8 Ounce) Packages Cream Cheese, Softened
  • 1 Cup White Sugar
  • 4 Eggs
  • 1 Cup Heavy Whipping Cream
  • ¼ Cup Powdered Sugar

Instructions
  1. For the Vanilla Wafer Crust
  2. Preheat oven to 350°F. Grease a 9-inch cake or springform pan. Wrap the outsides with aluminum foil. Set aside.
  3. Place ~60 vanilla wafers into a plastic bag. Finely crush with a rolling pin. In a medium bowl, combine wafter crumbs and melted butter.

  • 3/4 cup (3 ounces) cocoa powder (Dutch-process or regular; dark cocoa powder works great here)
  • 1/2 cup (2.25 ounces) all-purpose flour
  • 1/4 teaspoon salt
  • 5 large eggs (9 ounces)
  • 1 3/4 cups (13 ounces) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 sticks (16 tablespoons, 8 ounces) butter, melted

DIRECTIONS:
  1. Preheat the oven to 325 degrees F. Lightly grease a 2-quart baking dish (see note above) with nonstick cooking spray or butter.
  2. In a small bowl, whisk together the cocoa powder, flour and salt.
  3. In a large bowl, using an electric hand mixer (or in the bowl of a stand mixer with the paddle attachment), beat the eggs and sugar on medium speed for 5-7 minutes until very thick and light yellow in color. Don’t short the time on this step – it’s essential for the texture of the dessert.
